Just when I was in the process of weaning myself off gluten,
and feeling the better for it, I saw the sign on the side of the road in
Norwich. It said Suzanne’s Wood Fired Bread which sounded really good. I had no
idea that Norwich had a public town oven and when we arrived at the town park
there were twenty or thirty loaves ready plus an equal number already spoken
for. One young man announced “this bread is awesome”. My interest was piqued.
She had French country loaves, olive, rosemary, raisin and some others. We
discovered she only bakes when the spirit moves her and only on Fridays in the
summer. Her bread benefits from long rising times. So I am saved from becoming
addicted because the supply is limited. This truly is the best bread in the area.
